Today it was Father's Day here in Sweden and J and E was here to celebrate H. I had actually given him a gift this morning although he isn't my father but he is the father of my children.
After a quiet morning with a looooooooong lovely breakfast I made the bed and then went shopping. We have this role in the house that whenever it's someone's birthday or other day to celebrate they get to choose what we're having to dinner. Tody H of course choose, since it is his favourite food, meatloaf Mia's way with mashed potatoe and carrots.
OK I will give you the recipe:
Mia's meatloaf with mashed potatoes and carrots
1 kg mince meat
1 onion (yellow)
1 dl dried bread crumbs
1 dl cream
1 dl water
2 dl Vasterbotten cheese
1 egg
salt
pepper
Instructions:
Put 1 dl dried bread crumbs with the cream and water in a big bowl. Stir and let it swell for about 10 minutes. Add well chopped onion and grated cheese, stir. Then add an egg, salt and pepper. Finally you mix it all together until it's all well blended.
Use cold water on your hands and form a loaf which you then place in a greased ovensafed form. Put 3 thin slices of butter on top of the loaf and add some water just a couple of tablespoons in the bottom. Let it sit in 225 C for around 1 hour. If it gets too burnt turn the oven down to 200C. Slice and serve with home made mashed potatoes with real butter, warm milk, salt and pepper.
Peal carrots, slice them in coin size and boil them until they are soft in a salted water.
Serve together. Enjoy!
Nothing to it :-) I hope you will have a good night sleep. I know I will

Is mince meat like ground beef? We have something called minced meat here but it may or may not actually be meat. It's a mystery to me. Anyway, I was just curious!
SvaraRaderaYes it's the same. I think it's called mince meat in England and ground beef in USA. In Swedish it's notfars :-)
SvaraRaderaLoved the photo of you and T. You look so good!! New hairdo and your face looks really thin. And your weightloss this week. Awesome. I have said it before and I say it again: You are so good! Love you. Hugs Mia :-)
Amen mamma... nu blev jag ju hungrig igen :(
SvaraRaderaFörresten, du tror inte att du kan printa ut dina trevliga recept och ge mig? alt. maila dem till mig?
Can't you print them yourself? I can try to mail them to you if it helps otherwise you do have them here. Maybe I should write a cookbook?
SvaraRaderaHave a nice day. Hugs and kisses:-)
