Sunday dinner maybe?

Well, I haven't written for a couple of days but here I am again :-)
As usual a hectic week with work but also our youngest granddaughter turning 19. Happy birthday Klara.

Then I went to Norrtalje on Thursday to my friend Anne for treatment and of course lots of chat and laughter. It's always so nice to see her and we always have a good time, not to mention that I also feel better after the treatment I get. We always have lunch afterwards and this time we went to the Havspiren and it was so nice. Good food and the location is just magic even in wintertime.

This coming week is a big week because on Saturday we will be celebrating my oldest Danniel who turns 40. Can you believe that?
How can I have a 40 year old son, but I do. We will have dinner for him here on Saturday and I can't reveal what we are going to give him, if he reads this. So I will tell you next Sunday.

I will give you a very delicious, easy to do recipe for this Sunday. It's chickenfillet in a creamy sauce with sundried tomatoes. Enjoy (first in Swedish)


Kycklingfilé i gräddig sås med soltorkade tomater (4port)
4 st kycklingfilér
salt & peppar
paprika (malen)

Sås :
½ burk soltorkade tomater + 2 msk av marinaden
3 dl vatten
1 msk balsamicovinäger
1 msk tomatpuré
1 msk soya (japansk)
1 msk oxfond
1 burk crème fraiche (2,5dl)
1 dl grädde
salt & peppar
maizenamjöl + vatten till redning
1 kruka persilja

GÖR SÅHÄR :
Dela kycklingfiléerna på mitten, så du får 2 lite tunnare filéer. Bryn i stekpanna i olja och en klick smör. Krydda med salt & peppar och strö över malen paprika. (Ungersk paprika är sötare i smaken) Lägg upp kycklingen på ett fat.
Vispa ur stekpannan med vatten. Finhacka de soltorkade tomaterna och lägg i. Häll i ett par matskedar av marinaden de ligger i också. Tillsätt sen tomatpuré, soya, fond, crème fraiche, grädde och smaka av såsen med salt & peppar. Rör ner lite maizenaredning för en krämigare sås. Lägg ner kycklingen i såsen, sänk värmen och låt allt småputtra 10-15 min. Finhacka persilja och lägg ner precis på slutet.
Servera med potatis eller ris och sallad

Chicken breast in a creamy sauce with sundried tomatoes (4port)

4 chicken fillet
salt & pepper
paprika (ground)
Sauce:
½ jar sundried tomatoes + 2 tablespoons of the marinade
3 dl water
1 tablespoon balsamic vinegar
1 tbsp. tomato puree
1 tablespoon soy sauce (Japanese)
1 tablespoon meat fund
1 can of crème fraiche (2,5dl)
1 dl cream
salt & pepper
corn flour + water for preparation
1 pot parsley

Proceed as follows:
Cut chicken fillets in half, so you get two little thinner fillets. Brown in frying pan in oil and a knob of butter. Season with salt & pepper and sprinkle with grounded paprika. (Hungarian paprika is sweeter in taste) Place the chicken on a platter.
Whip out the pan with water. Finely chop the sundried tomatoes, and add in. Pour a few tablespoons of the marinade they are in as well. Then add tomato puree, soy sauce, fund, crème fraiche, cream and season the sauce with salt & pepper. Stir in a little cornstarch preparation for a creamier sauce. Lay the chicken in the sauce, reduce heat and let everything simmer for 10-15 minutes. Finely chop the parsley and put down just at the end.
Serve with potatoes or rice and salad

Yummie cookies and snow, and more snow....

My niece S in Salt Lake City posted a photo from a park in her town that pretty much looked like spring. SLC have similar weather to us here in Upplands Vasby but this winter it seems to differ. It has been snowing here now for 3 days and we have quite a lot of snow. Look at the photos here and compare that to my photos :-) Quite a contrast!

So quite different from the photo from SLC. Here I think they said we will have 6 weeks of winter. OK I don't mind as long as it's nice and sunny on May 23. There have been years when we have had snow in June even!

One of my favorite cookies and also for many others in my family. I call them Yummie cookies because they are so good :-)

Yummie cookies
16 st
113 g smält smör
150 g krossade Digestive
90 g kokosflingor
170 g ljus choklad
100 g hackade pekannötter (jag tog pekan- och valnötter)
1 burk kondenserad mjölk

Värm ugnen till 175 grader och placera ugnsgallret mitt i ugnen.
Klä en liten långpanna (23x23 ca) med bakplåtspapper.

Smält smör och häll i långpannan. Krossa Digestivekexen och strö krosset i ett jämnt lager över smöret. Strö kokos över smulorna. Strö hackad choklad över kokoslagret. Strö nötter över chokladen. Häll till sist över den kondenserade mjölken över alla ingredienserna. Blanda INTE IHOP ingredienserna. De ska ligga i lager på lager.
(OBS! Förbered gärna alla ingredienser i små skålar så går det fortare och lättare vid lager-på-lager momentet)
Grädda kakan i 30-35 minuter tills stickan kommer upp torr när du provar i kakans mitt. Låt kakan svalna i formen och skär sedan i rutor.
Förvara i kylskåp eller frys in.

In English:
Yummie cookies 16 pieces
113 g melted butter
150 g of crushed Digestive
90g desiccated coconut
170g milk chocolate
100g chopped pecans (I took pekan- and walnuts)
1 can of condensed milk

Preheat oven to 175 degrees and place oven rack in middle of oven.
Line a small roasting pan (23x23 approx) with parchment paper.

Melt the butter and pour into pan. Crush Digestive and sprinkle nibs in an even layer over the butter. Sprinkle coconut over the crumbs. Sprinkle chopped chocolate over coconut layer. Sprinkle nuts over the chocolate. Finally pour  the condensed milk over all the ingredients. Do not mix up the ingredients. They should lie in layers.

(NOTE: Prepare all ingredients in small bowls so it's quicker and easier when you do the layer-by-layer )

Bake for 30-35 minutes until the stick comes up dry when you try the cake in the middle. Let the cake cool in the pan and then cut into squares.

Store in the refrigerator or freeze.

Try this and enjoy, they are dangerously delicious!!

Sunday dinner

I didn't know what to do for Sunday dinner but I had a pork tenderloin in the fridge and also some cream and I alway have Vasterbotten cheese in my fridge so I made up the following.



Fläskfilé i ugn med god sås (4-6 port)
500-600 g fläskfilé
1 msk smör
2 dl vatten
2 dl vispgrädde
2-3 dl västerbottenost, riven
soja alt. tamarisoja efter smak

Gör så här:
Putsa och rensa fläskfilén. Skär i skivor och stek dessa i smör i en stekpanna. För över de stekta skivorna till en ugnsfast form. När alla skivor är stekta så häller du i vattnet och vispar om. Tillsätt därefter grädden och den rivna osten.
Krydda med salt, peppar och häll i lite soja eller tamarisoja eller lite av båda.
Häll såsen över fläskfiléskivorna och sätt in i 200 grader ugn i ca 25 minuter.

Servera med potatis och sallad alt. broccoli
Enkelt men oj vad gott det blev!

Pork tenderloin in the oven with good sauce (4-6) port

500-600 g pork tenderloin
1 tablespoon butter

2 dl water
2 dl whipping cream
2-3 dl Västerbotten cheese, grated
soy alto. tamari soy after taste

To do this:
Trim and clean the pork tenderloin. Cut into slices and fry them in butter in a frying pan. Transfer the fried slices into an ovenproof dish. When all the slices are fried then pour in the water and whisk on. Then add the cream and grated cheese.
Season with salt, pepper and pour a little Chinese soy or tamari soy or both.
Pour the sauce over the pork slices and put in 200 degree oven for about 25 minutes.

Serve with potatoes and salad alt. broccoli

Simple but oh how good it was!
