Sunday dinner maybe?

Well, I haven't written for a couple of days but here I am again :-) As usual a hectic week with work but also our youngest granddaughter turning 19. Happy birthday Klara. Then I went to Norrtalje on Thursday to my friend Anne for treatment and of course lots of chat and laughter. It's always so nice to see her and we always have a good time, not to mention that I also feel better after the treatment I get. We always have lunch afterwards and this time we went to the Havspiren and it was so nice. Good food and the location is just magic even in wintertime. This coming week is a big week because on Saturday we will be celebrating my oldest Danniel who turns 40. Can you believe that? How can I have a 40 year old son, but I do. We will have dinner for him here on Saturday and I can't reveal what we are going to give him, if he reads this. So I will tell you next Sunday. Yummie cookies and snow, and more snow....

My niece S in Salt Lake City posted a photo from a park in her town that pretty much looked like spring. SLC have similar weather to us here in Upplands Vasby but this winter it seems to differ. It has been snowing here now for 3 days and we have quite a lot of snow. Look at the photos here and compare that to my photos :-) Quite a contrast! Sunday dinner

I didn't know what to do for Sunday dinner but I had a pork tenderloin in the fridge and also some cream and I alway have Vasterbotten cheese in my fridge so I made up the following. Fläskfilé i ugn med god sås (4-6 port) 500-600 g fläskfilé 1 msk smör 2 dl vatten 2 dl vispgrädde 2-3 dl västerbottenost, riven soja alt. tamarisoja efter smak Gör så här: Putsa och rensa fläskfilén. Skär i skivor och stek dessa i smör i en stekpanna. För över de stekta skivorna till en ugnsfast form. När alla skivor är stekta så häller du i vattnet och vispar om. Tillsätt därefter grädden och den rivna osten. Krydda med salt, peppar och häll i lite soja eller tamarisoja eller lite av båda. Häll såsen över fläskfiléskivorna och sätt in i 200 grader ugn i ca 25 minuter. Servera med potatis och sallad alt. broccoli Enkelt men oj vad gott det blev!
